Ingredients
2 cups of whole wheat flour
2 tablespoon of ghee (clarified butter)
Salt to taste
Water for kneading
Extra ghee or oil for cooking
Instructions
In a mixing bowl, combine the whole wheat flour,2tablespoons of ghee,and a pinch of salt.
Gradually add whater and knead the mixture into a smooth and soft dough. The
dough should be firm but pliable.Cover it with a damp cloth and let it rest for about 15-20minutes.
After resting, divide the dough into small equal-sized portions and roll them into balls.
Take one dough ball and flatten it slightly with your hands. Then,roll it out into a thin circle (approximately 6-7 inches in diameter)
using a rolling pin. You can apply a little dry flour to prevent sticking.
Spread a little ghee or oil evenly over the rolled-out dough circle.
Sprinkle a pinch of dry flour over the ghee-coated circle.
Now, make small, evenly spaced cuts from the center towards the edge of the circle, like spokes of a wheel.
Start pleating the dough from one end, folding it inwards in a spiral fashion until you reach the center.
This will create layers in the paratha.
Gently press the center to seal the layers.
Heat a griddle or a non-stick pan over medium-high heat.
Once hot, place rolled and layered paratha on it .
Cook until small bubbles start to appear on surface, than flip it over.
Apply ghee or oil on this side and cook until both sides are golden brown and crispy.
Remove the laccha paratha from the pan and place it on a plate. You can tap it gently it open up the layers.
Serve hot with your favorite curry, yogurt ,or pickle.
