Malai kofta curry

 


Ingredients for Koftas:

250g paneer (cottage cheese), grated

2 medium-sized potatoes, boiled and mashed

2 tbsp cornflour or all-purpose flour

Salt to taste

1/2 tsp red chili powder

Oil for frying


Ingredients for Gravy:


2 onions, finely chopped

2 tomatoes, pureed

1/2 cup cashew nuts, soaked in warm water

1-inch piece of ginger, grated

3-4 cloves of garlic, minced

1/2 tsp cumin seeds

1/2 tsp turmeric powder

1 tsp red chili powder (adjust to taste)

1 tsp garam masala

1/2 cup heavy cream

2 tbsp butter or ghee

Salt to taste

Fresh coriander leaves for garnish


Instructions:

To make the koftas:


In a mixing bowl, combine grated paneer, mashed potatoes, cornflour, salt, and red chili powder.

Mix well and form small, round balls (koftas) from the mixture.

Heat oil in a pan and deep-fry the koftas until they turn golden brown. Remove and drain excess oil on paper towels.


To make the gravy:


Grind the soaked cashews into a smooth paste using a little water.

Heat butter or ghee in a pan, add cumin seeds, and let them splutter.

Add chopped onions and sauté until they turn golden brown.

Add grated ginger and minced garlic, and sauté for a couple of minutes.

Add the tomato puree and cook until the oil separates from the mixture.

Add turmeric powder, red chili powder, and salt. Mix well.

Stir in the cashew paste and cook for a few minutes.

Add heavy cream and garam masala, and simmer for a couple of minutes.



Just before serving, place the koftas in a serving dish.

Pour the hot gravy over the koftas.

Garnish with fresh coriander leaves.
